Snails and velvet foot mushroom

Flammulina Velutipes
48 prepared"petits gris"  snails 
4 shallots
1 garlic clove
1 knob of butter
A pinch of sugar
1 bunch of parsley
Salt and pepper
  • In a large skillet, place the chopped onion, a clove of crushed garlic, the mushrooms, the butter and sugar
  • Add 10 cl of water, and bring to boil
  • Cover, reduce heat and let simmer for 10  minutes
  • Uncover, add already prepared snails  (cleaned and precooked -you can find excellent ones in glass jars), half the chopped parsley, a little liquid if necessary, and cook over medium heat another 10 minutes
  • Mushrooms should  become properly rehydrated and slightly colored
  • Serve while hot with remaining parsley, salt and pepper
