Bouquets Garnis

A large piece of kombu
A few parsley stalks
Few grains of pepper
A piece of hot pepper
Half a clove of garlic
 
  • Kombu makes excellent bouquets garnis for pulses (lentils, beans, soybeans, chickpeas) facilitating also their cooking and digestion
  • Hydrate the algae 5 minutes until they soften
  • Spread them out
  • Place in their center the parsley stalks, the peppercorns, the bit of hot pepper and garlic, then fold the kombu to make a roll, and tie it up without tearing it
