Organic (but really really good)
This red and palmated alga, previously unknown in Japan, is the delight of the abalone and abounds in Brittany. Ours is collected from the area between Ouessant and the coast. It's an “energy bomb”, concentrated in potassium, iodine, iron, protein and widely.
When rehydrated (5 min.) it takes an intense color of vines in the fall, and has a smooth flavor especially iodised. You can serve it raw, seasoned with vinegar and oil to accompany vegetables (artichokes, asparagus, beets) or fresh cheese, or poached in broth (2 min.) to accompany fish or shellfish.
