Long and ruffled bushy plant, growing in the deep water off Kerazan, between the islands and islets along the channel of Aber Wrac'h. These exceptional and wild seascapes are certified organic since 2012.
This type of kombu possesses, in addition to the nutritional qualities common to all algae, a certain sweetness and a firm and crunchy texture, ideal for using in fish papillotes. The glutamic acid it contains emphasizes the taste of fish while improving its texture.
Royal Kombu facilitates the cooking of pulses by speeding up the cooking time while it enriches broths in minerals and trace elements (it is a flavor enhancer). Rehydrate it for 10 minutes in water to soften it, before using it.
