With Supersec, mushrooms are always in fashion!
Hydnum repandum, most commonly known as “Hedgehog Mushroom”, are notable for their spore-bearing structures which are shaped like teeth rather than gills. They are broadly distributed in Europe but it is in the deep coniferous forests of Gaspésie, Northern Quebec, that we found the most beautiful ones. They are collected up at the end of summer when they preserve their fine amber color and strong aroma.
Rehydrate the Hedgehog Mushroom by soaking them in warm water until they are plump (should take about 10 min). Then, sauté them with a little butter, a pinch of sugar and some of the soaking liquid and let them brown gently. Chop as required and eat them as they are or integrated into risotto, soups, sauces, stir-fries…
