Ceps (Boletus edulis) are collected in Caucasus oak (June), beech (July-August), and black pine (September-October) forests, nature reserves of western Macedonia, northern Greece. What we were able to collect,is what the bear left over.
Cut into thick slices before drying they are particularly suited to accompany pasta, risotto, and to prepare sauces.
They can be eaten as such or they can be rehydrated directly in the pan with a little oil (or butter) and a little stock (or a little pasta water).
