What is complicated in the collection of this delicious of mushroom, is not so much its fragility or sensitivity, or that it likes sunny woods, safe and warm, preferably from oak or chestnut; it is finding willing gatherers that will sacrifice their month of August trudging under the foliage of Valia Kalda, rather than spending their summer in Mykonos dancing the syrtaki on a beach.
Rehydrate the mushrooms directly in the pan over medium heat with a little water (or broth) and butter for about ten minutes until lightly colored.
